Its beautiful and unusual pale salmon colour, elegant aromas of luscious strawberry, and a combination of summer pudding and Seville orange marmalade flavours are just the beginning. A note from their winemaker: "In some ways it is curious that there is not more dessert wine made from Pinot Noir. This delicate, aromatic varietal is prone to Botrytis and many of the classic late harvest wines are the result of this combination. With Pinot Noir the Botrytis-affected clusters are usually discarded. I thought it might be interesting to find a use for this fruit and so set about picking before the red wine harvest. The natural sugar was high, but we decided to concentrate it further still by freezing the juice - it made a delicious sorbet! - so that after fermentation it settled to 18% residual sugar and just 10% alcohol."
