The vineyards of Pouilly-Fume are situated on the right-bank of the River Loire and as with Sancerre, Sauvignon Blanc is the grape of choice. Jean-Max has been sourcing the grapes for this wine from three long-term friends in Pouilly-Fume for over 20 years. The grapes are grown on two distinctly different soil types, one clay based, the other flinty.
Les Chante Alouettes has great intensity and aromatic richness. The flinty soil adds the mineral and gunflint character, whilst the clay soil provides the floral aromatics and fruit concentration, essentially bringing out the richness on the palate.
Best serves between 8 & 12 degrees C, it makes a good aperitif and is a good match for most seafood and shellfish. Lighter meat dishes and goats cheese are also exceptional matches.
