100% Chardonnay
Food Matching Note : Sublime with one of the following: roast turkey with hazelnut stuffing and a white wine gravy, citrus tarragon braised chicken, fried fish with Moroccan-style herb and Chardonnay sauce or grilled swordfish with coriander lime butter. Tasting Note : Intense tropical fruit core, butterscotch, vanilla and toast surrounded by some wild notes that give this wine a complex nose. Crisp yet smooth and velvety on the palate. Rich in tropical fruit flavours and cream, with generous and well integrated oak. Vinification Note : Vineyards: 75% MontGras, Colchagua Valley, 25% Casablanca Valley Vine Management: Vertical and Lyre shoot positioning Maturity: 23.5 Brix average Vinification: The grapes were loaded directly into the press for whole cluster pressing, allowing the extraction of only the finest quality juice and preserving the fruit flavors. The must was fermented in stainless steel tanks, at a temperature of 16º C for approximately 15 days. 15% of the wine was fermented in American oak for 4 months.
