Les Meysonniers was produced from Syrah fruit on vines between 40 and 60 years old. As the grapes ripened, they were continually checked to find the perfect balance of sugar, acidity and fruit flavour. Fermentation took place in wooden vats, with the skins pushed down twice a day in order to extract colour, flavour and tannins. After fermentation, the wine was matured in oak casks for a year adding structure and cedar notes.
