Peller Ice Cuvee

What is ice cuvee sparkling wine?

Ice Cuvee is a sparkling Canadian wine, made by the Peller Estates, it is a dry sparkling wine, but with hints of honey, perfumed with apricots, yeast and ripe apples, with flavours of tropical fruit and sweet grapefruit.

Food Matching: Enjoy before a meal with salty appetizers, seafood or creamy risotto or with fresh fruit and creamy cheeses.

Vinification: Using the ‘methode classique’, individual batches of the champagne grapes chardonnay and pinot noir are fermented in tank. A cuvee is made using a selection of these wines which are then bottled with yeast and sugar. After ageing on the lees for approximately 30 months, the bottles are riddled, degorged and a dosage of 110ml of Icewine is added

Peller Icewine, Riesling

Peller Icewine Riesling, an absolute mist with fruit based desserts.

Tasting Note: Luscious dessert wine, exhaling yellow plum and star fruit, then filling the mouth with golden pineapple and candied lemon.

Food Matching: Best enjoyed when served chilled at 8 – 10°C. Peller Riesling Icewine is a wonderful accompaniment to food, complimenting dishes such as paté or with foie gras for a mouth sensation. Also a wonderful companion to salty appetizer or cheese (such as mild blue cheeses) and an absolute must with fruit based desserts!

Vineyard: Proximity to Lake Ontario allows for full ripening of grapes while retaining acidity. Total icewine vineyard covers some 250 hectares, planted North to South for maximum sunlight.

The grapes are naturally frozen and hand harvested at -10°C and pressed frozen, releasing only one drop of pure extract from each grape. The wine is aged 100% in stainless steel.

Peller Icewine, Vidal

Peller Icewine, Vidal (37.5cl)

Tasting Note: This intense, luscious Icewine from Ontario emits a blast of pear, honey and caramel, while peaches, pears and a tangy hit of lemon drops take over the tongue.

Food Matching: Make yourself a Peller Icewine martini. Great with pâté or salty appetizers. Pair with Indian curry or Asian cuisine. Exceptional with flavourful cheeses such as aged cheddar or blue. Perfect with fruit focused desserts such as lemon tarts, flan, and apple strudel. Also delicious with crème brulée, crème caramel or syllabubs.

Peller Sparkling Rose

A Sparkling wine from champagne varieties; Chardonnay and Pinot Noir but with the addition of Cabernet Franc and icewine as the dosage make for an unusual treat on several levels: A Canadian sparkling wine, enticingly perfumed with strawberry, peach juice and watermelon, followed by a mouthful of red berries and a touch of spice.

Food Matching: Enjoy before a meal with assorted appetizers; during a meal with grilled salmon, roasted herb chicken or lightly spiced pork tenderloin; or after a meal simply on its own.

Vinification: A traditional ‘méthode’ sparkling wine made with hand-picked Chardonnay and Pinot Noir grapes, are the base wine for this sparkling wine from champagne varieties but with the addition of 10% Cabernet Franc aged all in stainless steel just before Tirage. After 12 to 14 months on lees the wine is degorged, a ‘dosage’ of Cabernet Franc Icewine and Vidal Icewine is added top finish the wine as ‘off-dry’

Peller, Cabernet Franc Icewine

Icewine from Canada is a sweet wine from naturally frozen Cabernet Franc grapes that are pressed frozen to release only one drop of pure extract from each grape

Tasting Note: This sweet icewine from Canada is fragrant with rhubarb, raspberry, blackberries and herbs, while the acidic flavours of redcurrants and pomegranates prevents the considerable sweetness from becoming overpowering.

Food Matching: Enjoy during a meal, with paté or with foie gras for a mouth sensation. A wonderful companion to spicy Asian cuisine. Try with black olive tapenade on crusty baguette. Enjoy after a meal, with fruit based desserts of cherries, raspberries and strawberries or dark chocolate. Also enjoy with soft, blue veined cheeses, blueberry tarts, plum cobbler or dark chocolate dipped strawberries.

Vinification: Naturally frozen Cabernet Franc grapes are hand harvested at -10°C. Pressed frozen, releasing only one drop of pure extract from each grape. Fermentation is performed at a cool temperature to retain fruit concentration (a short skin contact for colour and complexity), then 70% of the wine is aged in stainless steel
